AMASYA Squeezed Tarhana RECIPE:

MATERIALS

Tarhana ingredients;

pouch yoghurt
Splitting
Salt

Ingredients to be put into the soup;

4 squeezed tarhana
4 water glass of water

For the Soup Sauce;

1,5 meal spoon tomato paste 
5-6 cloves of garlic 
Salt, Mint

FABRICATION

  • First, cook the cracked wheat and after it cools down, pour the pouch over the yoghurt. 
  • Add salt and mix well.
  • Then shape it into a bowl and place it on trays.
  • Dry the tarhanas front and back for 3 days.
  • Then, put 4 squeezed tarhanas in a bowl and pour 4 glasses of water over them. (Do this 1 night before)

  • After keeping the tarhana in water for 1 night, mash it thoroughly with a fork.
  • Then put it in a pot, add 4 glasses of water and boil it.
  • After cooking until soft, fry 4 tablespoons of olive oil and tomato paste together in a separate pan.
  • Add garlic, salt, black pepper and mint and continue frying lightly.
  • Pour the sauce you made over the boiling soup.
