HOW TO MAKE STUFFED MASKUMER?
To make stuffed mackerel, follow these steps:
- Before splitting the mackerel's belly, clean its gills. Break the middle bone of the tail. Separate the bone from the meat by rubbing the fish with your fingertips. Grasp the bone from the top and remove it. Clean off any remaining meat. Prepare and wash all mackerel in the same way.
- Heat the olive oil in a pot and roast the pine nuts. Add chopped onion and mackerel meat and continue frying. Add rice. Mix well and add cinnamon, allspice, black pepper, currants and salt. Add hot water and cook on low heat for 5 minutes. Add chopped dill and parsley.
- Stuff the mixture into the mackerel. Dip it first in flour, then in beaten egg yolk, and lastly in breadcrumbs. Fry it in a pan with not very hot sunflower oil for 6-7 minutes. Serve hot.
