Aegean flavor in MasterChef: How to make Çullama Meatballs?

In the last episode of MasterChef Turkey, the contestants were asked to cook a dish from the Aegean cuisine. One of these dishes was Çullama Meatballs. Çullama Meatballs are known as a local flavor of Afyonkarahisar. These meatballs are made from ground meat with bulgur and then coated in a mixture of egg, yoghurt and flour and fried. Tomato sauce is poured on top. Finally, it is served with yoghurt. So, how to make Çullama Köfte? Here are the ingredients and preparation of Çullama Meatballs, an Aegean flavor in MasterChef.

Ingredients for Çullama Köfte

You will need the following ingredients to make this delicious meatball:

  • 500 grams of ground beef
  • 1 cup fine bulgur
  • 1 onion
  • 1/4 bunch of parsley
  • 3 tea spoon salt
  • 1 tea spoon black pepper
  • 1 teaspoon of cumin
  • 1 teaspoon of allspice
  • 3 pieces of eggs
  • 1 tablespoon of yoghurt
  • 3 tablespoons of flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1,5 water glass measure of oil
  • 1 spoonful butter
  • 1,5 cups of tomato puree
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of paprika
  • 1 teaspoons of dried mint
  • 2 glass of strained yogurt
  • 1/2 teaspoon of salt

How to make Çullama Meatballs

To make Çullama Köfte, follow the steps below:

  • First, prepare the meatball mixture. To do this, knead the ground meat, bulgur, grated onion, finely chopped parsley, salt, black pepper, cumin and allspice in a bowl. Take walnut-sized pieces from the mixture, roll them and flatten them by pressing lightly. Arrange the meatballs on a plate and let them rest in the refrigerator for half an hour.
  • Whisk eggs, yoghurt, flour, baking soda and salt in a bowl. This mixture will be used to coat the meatballs.
  • Heat oil in a pan. Coat the meatballs in the egg mixture and fry in hot oil until golden brown. Place the fried meatballs on a plate lined with paper towels and drain excess oil.
  • Melt the butter in a sauce pan. Add grated tomatoes, salt, black pepper, chili peppers and dried mint. Bring the sauce to a boil and cook over low heat for 10 minutes.
  • Mix Greek yoghurt and salt in a bowl.
  • First spread the yoghurt on the serving plate. Arrange the meatballs on top. Finally, drizzle the tomato sauce. Your Çullama Meatballs are ready. Enjoy your meal!
